Pumpkin Cake recipe:  2 1/2 c. sugar 2 1/2 c. all purpose flour 1/4 tsp. salt 1 tsp. baking powder 1 tsp. EACH of cinnamon, cloves, nutmeg, and allspice (I actually use a little less than a tsp) 15 oz. can of pureed pumpkin, NOT pumpkin pie filling 1 c. vegetable oil 3 eggs, lightly beaten 1 tsp. vanilla  Preheat oven to 350. Prepare pans by either using baking spray or grease and flour. Mix together dry ingredients in a medium bowl. In large bowl combine wet ingredients until creamy. Slowly add the dry ingredients to the wet, mixing until just combined. Bake 18-25 minutes if making cupcakes, 35-45 minutes if using 2 cake pans. This recipe will make 24 cupcakes or a 2 layer 8&quot; or 9&quot; cake.&amp;#32;&amp;#32;The ice cream scoop only works on thicker batters, for my chocolate cake I use a measuring cup to pour.  I’ve noticed that my cream cheese frosting doesn&apos;t taste very good right away, for some reason the flavors take a little longer to meld. Once they have though....YUM. This recipe should NOT be left out at room tempterature for longer than the time it takes to decorate the cake. I only needed to add 1/4 c. of cream but you could add less and have it still turn out well. One warning, if your kitchen is warm, DON&apos;T add any liquid until all the sugar is in, you might not need it.  Cream Cheese Frosting  1/2 c. salted butter, softened 1/2 c. shortening 8 oz. cream cheese, softened  2 tsp. clear vanilla 1/4 c. cream (light cream, heavy cream, or half and half) 2 lbs. (8 cups) powdered sugar  Cream together the butter and shortening, then add the cream cheese until well blended. Add the vanilla and cream, mix until thoroughly incorporated. They make a great accompaniment to almost any meal!  Note:  I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed.  Ingredients:  2 medium baking potatoes ½ teaspoon salt 1 ½ tablespoons butter or margarine, melted 1 tablespoon of chopped fresh herbs (I used parsley, chives, thyme, and sage.  You may use any or all of these.  If you used dried herbs, use only 1 teaspoon altogether.) 2 tablespoons finely shredded sharp Cheddar cheese 1 tablespoon finely grated Romano or Parmesan cheese (I use Italian Peccorino Romano cheese.) cooking oil spray  Wash and peel potatoes.  Keep covered with water until ready to use.  When ready to assemble recipe, dry the potatoes with a paper towel.  Cut potatoes into thin slices, but not all the way through.  Use the handle of a spoon to prevent knife from cutting all the way.  Put potatoes in a baking dish that has been sprayed with cooking oil.   Fan the potatoes slightly.  Sprinkle with salt and drizzle with butter or margarine.  Sprinkle with herbs.  Bake potatoes at 425 degrees for about 50 minutes.  Remove from oven and sprinkle with cheeses.  Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside.  You can check for doneness with a fork.  Serve immediately.  These are very pretty when served alongside a steak or other entrée.  I hope you like these!—Betty  </description>
